Lopez Real is a family owned brand who have produced mezcal from their palenque in Santiago Matatlan, Oaxaca since 1956. Sabina Mateo is the current Maestra Mezcalera. Their 100% Tobala is pit roasted, tahona mashed, fermented in wooden tinas with ambient yeast, and double distilled in copper alembic stills. It has the characteristic bubble gummy fruit quality of Agave Potatorum and a subtle lactic quality on the nose. The smoke is mild and well integrated. On the palate it starts sweet and fruity but finishes dry and a bit peppery. Really solid Tobala at an affordable price for the agave used.
