Agave Cenizo from the village of Nombre de Dios in Durango. The agaves are pit roasted and then shredded with a mechanical mill. The agaves are mixed with spring water and fermented in pine wood tanks and double distilled in copper alembics with stainless steel caps. It has a candied, almost grape or green apple Jolly Rancher aroma with some funky wood notes and citrus. Very pleasant and approachable sipping mezcal.
