Bacanora is an agave spirit from the state of Sonora in Mexico that was illegal to produce until 1992. Bootleggers had been producing it for generations but it finally got it's own denomination of origen from the Mexican government in 2000. Made from the Agave Pacifica which is a variety of Angustifolia (like Espadin, Tequiliana Weber and others) and is usually produced in the same manner as traditional mezcal.
This is an intensely floral, minerally, and minty Bacanora at an almost absurd price point. A good introduction to the category for those looking to try something new in the agave spirits space.
