Homles Cay Versailles 2018 Single Cask Rum
55% ABV
This single cask rum was produced at the Diamond Distillery in Guyana on the legendary Versailles wooden pot still. The still is made from Guyanese greenheart wood, an incredibly dense tropical wood, and it was built in the 19th century at Plantation Versailles, a former sugar estate. It eventually ended up at Diamond Distillery, now the only distillery in Guyana, and is one of three historical wooden stills in operation there.
The rum is made from 100% molasses and it was aged in ex-Bourbon casks for 4 years in England plus a further year in New York State. Bottled at a robust 55% ABV with no additives of any kind.

Two casks of this edition were selected. There are few opportunities to taste a mark from this one-of-a-kind, heritage still.
TASTING NOTES: Butterscotch on the nose, along with creme brûlée and tobacco on the tongue.
RECOMMENDATIONS Best enjoyed neat with a splash of water.
