Gusto Historico Bicuixe - Ignacio Juarez

Ignacio "Nacho" Juarez produced a 220 liter batch of Bicuixe in 2024 at his palenque in Miahuatlan, Oaxaca. Bicuixe is an Agave Karwinskii and we believe the finest examples of the agave come from Miahuatlan. Pit roasted, tahona crushed, naturally fermented with ambient yeasts in sabino wood tinas, and distilled in a single run through a copper refrescadera still. This type of still is basically like a copper alembic still but it has a stainless steel cylinder surrounding it. The cylinder is filled with water during distillation which cools the alcohol vapors causing them to recondense back into the still. It allows the distiller to attain a fully distilled spirit in a single pass, rather than the double distillation required from a regular alembic still. 

This Bicuixe is sweet with tropical fruits, a touch herbal with a lactic edge.

With unique bottlings from Marco’s uncles, aunts, and cousins, the brand operates outside the constraints of mezcal’s Denomination of Origen (bottling instead as “spirits distilled from agave”), aiming instead to preserve true heritage agave distillates—spirits of Historic Taste—that transcend commercial categorization.

Every release is made up of a single tiny batch, by nature unique and irreplicable. Educational and delightful in equal parts, these spirits are a pleasure for the mind and the palate."
