Faer Isles Distillery Ocean Truffle Akvavit

Faer Isles is a Distillery on the Faroe Islands, a remote island chain in the north sea that is part of the Kingdom of Denmark. They produce malt whisky, vodka, gin, and 2 different Akvavit. They proof their spirits with water from an undersea aquifer that is over 1 million years old and use different varietals of seaweed in all of their white spirits. Akvavit (or aquavit) is a Scandinavian grain distillate that is akin to Gin but whose primary botanical is caraway seed rather than juniper. This one contains Ocean Truffle seaweed which gives it a funky aroma and flavor reminiscent of black truffle. Incredible, complex, challenging, pleasurable. 

Producer Notes:
Just like the famously aromatic truffle, the Ocean Truffle seaweed (Vertebrata lanosa) is a rare but very potent botanical, full of truffle flavour but with an oceanic twist. Its habitat is the cold, North Atlantic Ocean around the Faroe Islands. It grows on other types of seaweed and therefore must be hand-picked by divers. It is best in certain areas around the islands and its flavours peak in February-March. Therefore it is a limited resource that must be foraged with great care for environmental sustainability and its ability to replenish. This is the only akvavit in the world and one of only two spirits in the world using Ocean Truffle as a botanical.
