Don Vicente Blanco is made from 100% Blue Agave from Los Altos in Jalisco. The agaves are roasted in brick ovens and crushed with Felipe's custom tahona. It is fermented in open top stainless steel tanks without bagasso (agave fibers) and utilizing deep well water. It is double distilled in copper pots and micro oxygenated for a full day to give it a softer and rounder mouthfeel. This is a blanco for sipping that is at a price point where it won't kill you to shake or stir it into your favorite tequila cocktail.
About Destileria El Pandillo-NOM 1579 El Pandillo is the domain of Master Distiller Felipe Camarena. Felipe is a 3rd generation distiller and a 6th generation agavero (agave farmer). His family founded and owns the La Alteña Distillery (Tequila Tapatio, El Tesoro de Don Felipe and others) and his brother Carlos owns Los Alambiques (Tequila Ocho).
Felipe is a mechanical engineer by trade and he has designed and built numerous unique pieces of equipment that he uses in the production process. Perhaps the most famous one is "Felipenstein", his 19,000 pound custom tahona that he uses to extract the juices from his roasted highland agave. It's also one of the most sustainable facilities in Jalisco with a rainwater capture system, biodiversity in his agave fields, and stillage treatment program. He is a force of nature and a true master of his craft. He's also one hell of a good hang.
