An ensamble of Papalote (Agave Cupreata) and Pizzorra (Agave Marmorata) from the village of San Pablo Ameyaltepec in Puebla Mexico. The 12-18 year old agaves are pit roasted and spontaneously fermented with ambient yeasts. They are distilled a single time through a "resaque" or reflux style copper alembic still with three plates. It is intensely floral with loads of tropical fruit sweetness and citric balance. Sort of an overlooked bottle in the Del Maguey lineup and definitely one of our favorites here at Prizefighter HQ.
