Del Maguey Minero

Mezcal Ancestral made in the village of Santa Catarina Minas, Oaxaca. "Minero" is a term to describe someone from this incredibly important village of ancestral, clay pot distilled Mezcal production. Florencio Carlos Sarmiento was the original producer of this brand and his daughters, sons and grandsons have carried on the traditions since his passing in 2017. This is made from locally grown agave espadin that are pit roasted and left to pre-ferment for a period of several days. The cooked agaves are then mashed by hand in with wooden mallets and fermented with ambient yeast in open top wooden tinas. They are double distilled in the ancestral method of clay pot stills over an wood fire. 

This was the first Ancestral mezcal we had ever tasted when it was first released in the early aughts and it's still one of the best. A gorgeous creamy texture on the palate from the clay pot distillation with a floral and burnt honey aroma.
