Coyote Sotol Chihuahua

Sotol Coyote Chihuahua is produced by Maestro Sotolero Gerardo Ruelas in Aldama, Chihuahua. Señor Ruelas is a prolific producer who bottles sotoles under most of the well known brands. The varietal of Sotol used is Dasylirion Leiophyllum and is produced in the Desierto or desert region of Chihuahua in northern Mexico. The 10-15 year old sotol piñas or hearts, are roasted in a conical, rock lined earthen pit and are crushed with a stone tahona. They are spontaneously fermented in wooden tanks with well water and double distilled on copper alembic stills.
