Clairin is a category of cane juice Rhum from Haiti. Produced similarly to the more well known Rhum Agricole of Martinique but not a part of the French AOC designation. They are most commonly produced by small farmer distillers in the countryside of Haiti rather than at more formal commercial distilleries.

Sonson is made by Stephan Kalil Saoud. He cultivates a variety of cane called Madame Meuze which Luca Gargano, found of Velier believes to be the finest varietal for Rhum production. He boils the fresh pressed cane juice into a syrup prior to fermentation. Herbaceous and sweet, this is maybe the most approachable Clairin in the line.

Importer Notes:
Stephan Kalil Saoud cultivates the local variety of cane called Madame Meuze on his 25 hectares of field where the cane is grown together with banana and other fruit trees. Once harvested, the sugar cane is pressed and slowly reduced to syrup before it is fermented naturally using the ambient yeast of the distillery and field.

The distillation is carried out using pot stills crafted by his father who founded the distillery in 1932. Clairin Sonson shows pronounced herbaceous notes of lemongrass and basil on a striking yet approachable palate.
