Clairin Sajous

Clairin is a category of cane juice Rhum from Haiti. Produced similarly to the more well known Rhum Agricole of Martinique but not a part of the French AOC designation. They are most commonly produced by small farmer distillers in the countryside of Haiti rather than at more formal commercial distilleries.

Sajous was made in the village of Saint Michel de L'Attalaye, Haiti by Master Distiller Michel Sajous. Made from an heirloom cane variety called Cristalline grown without chemicals or fertilizers. 100% fresh pressed cane juice is spontaneously fermented with wild yeasts. Double distilled to proof in a traditional pot still heated by an open wood fire. It is creamy, peppery, tropical and mouth coating. Absolutely stunning stuff.
