Clairin Le Rocher Haitian Rhum

Clairin is a category of cane juice Rhum from Haiti. Produced similarly to the more well known Rhum Agricole of Martinique but not a part of the French AOC designation. They are most commonly produced by small farmer distillers in the countryside of Haiti rather than at more formal commercial distilleries.

Le Rocher is produced by Master Distiller Bethel Romelus in the village of Pignon, Haiti. Sugar cane syrup made from natural cane juice is fermented with ambient yeasts and approximately 30% of dunder from the previous batches during the distillation process. This is a combination of the French colonial method of Rhum production combined with the dunder-style technique of the English in Jamaica. 

It is sharp and vegetal with aromas of both fresh sugar cane funk and a bit of dunder-style Jamaican hogo funk. On the palate it is bright and green with cane sweetness and a lengthy finish. The flavors and aromas are almost electrically charged.
