Campanilla del Palmar Maguey Verde Jaime Navarro

Campanilla del Palmar is produced by Maestra Maria de La Luz Martinez and her sons Jaime and Manuel Navarro in the community of Palmar Segundo in the state of San Luis Potosi in Central Mexico. They have been producing clay pot distilled mezcales for 8 generations. The family harvests 4 different varieties of Agave Salmiana that are grown locally; Verde, Chino, Cuerno, and Blanco. They roast the agaves in an above ground stone over, mash the cooked agave by hand, and ferment the juice and fibers with ambient yeasts and pulque, which helps to jumpstart the fermentation.

They utilize an ancient and rare type of still known as a "Mongolian" type of still, which is similar to the Filipino style still used in other parts of Mexico but different in that it doesn't have an exit spout for the condensed spirit. It instead uses an internal catchment with a 15 liter clay pot that hangs inside of the still. Cool water is ladled by hand on to the top of the still to control the condensation for the entirety of the distillation process, a time and labor intensive method. 

This is a variety of Agave Salmiana known as Verde and is made by Jaime Navarro. It is absolutely stunning. Complex and sweet with some wild fruit notes and earth.
