Caballito Cerrero is a fascinating distillery located in a verdant valley in the hills above the town of Amatitan, Jalisco. The distillery is owned by the Ramirez family who founded Herradura Distillery many years back but split off into their own entity many years ago following a family dispute. The current master distiller is the 15th generation of his family to produce Tequila. However it is not technically Tequila as they opted out of certification due to some production processes that fall outside of the rules. They also ran afoul of the CRT (Tequila certification board) because they continue to make a spirit from an agave called Chato which of course is not permitted to be used in the Denomination of Origin for the category.
Regardless of how the Mexican government classifies them, we think of them as a traditional tequila and one of the best around. This is an extremely limited release that is made by current Maestro Javier Jimenez Vizcarra and his father, the previous Maestro. They make a batch of tequila together once a year and reflect on the family's history while doing so. It is distilled to proof and the batch from June of 2024 was a mere 180 liters. Vanishingly rare, stunningly delicious liquid from a traditional yet outsider distillery.
