Bonete Raicilla Costa

Raicilla is a category of Mexican agave spirits from the state of Jalisco. This is primarily Tequila country but Raicilla is an artisanally produced category that is more akin to Mezcal than Tequila. This particular bottling comes from the Costa or coastal region, specifically the village of El Tuito. Maestro Tabernero Joaquin Solis pit roasted 2 types of Maguey or agave for this batch; Amarillo (Agave Rhodacantha) and Chico Aguiar (Agave Angustifolia Haw). The mash is distilled in plastic open top tubs with wild ambient yeasts. It is double distilled in an ancestral style still made from a hollowed out trunk from an Oyamel tree with a copper pot beneath it. Cheesy, lactic, olive brine, funky! This is a wild and delicious Raicilla!
