Made in Vermont by Caledonia Spirits, a project that started as a collaboration between a beekeeper and a distiller. Their Gin is made with a base of neutral grain spirit that is passed through their "custom-built botanical extraction still" with hand crushed organic juniper berries. No other botanicals are added to the distillation. They then add local Vermont wildflower honey to sweeten it lightly which adds a great deal of botanical character. It behaves like an Old Tom Gin for cocktail purposes as it has a bit more sweetness than your average London Dry or New Western Gin. A fantastic Gin from a company that does important work to protect our vital pollinators, the bees! Kosher and gluten free.
