Alto Canto Blanco High Proof

Alto Canto is the sole brand produced at Tequila El Rocio, a distillery that sits at 9000 feet above sea level, in the Sierra del Tigre mountains of Jalisco Mexico. They harvest certified organic agaves that are brick oven roasted for 72 hours and crushed in a tahona made from lava rock. They are spontaneously fermented with the agave fibers, mountain spring water and ambient yeasts in pipones, which are large wooden vats. The mash is double distilled in copper pots, and this expression is bottled at still strength with no added water. 

This is a Tequila-nerd's special. Super agave forward with loads of earthy mineral flavors, light citrus, olive brine, and white pepper. It is oily and viscous with a lovely mouthfeel and lengthy finish. Stunning stuff.
