Alambique Serrano "3 Años" Rum - 2nd Edition

46.4% ABV

This rum was made by Rommel, Axel, & William Krassel, 3rd generation distillers in Santa Maria Tlalixtac in the mountainous Cañada region of Oaxaca, Mexico. Their grandfather Max emigrated from Germany in 1930 and landed in Oaxaca where he learned about the distillation of Aguardiente (rum). He eventually designed his own custom continuous still that they use to this day. They produce an unaged column distilled rum called Cañada as well as their aged rums under the Alambique Serrano label. This is their second release under the Alambique Serrano line that is not cask strength.

The family harvests organic sugarcane from the high elevation hillsides above the distillery. The cane is immediately transported to their trapiche for milling the same day. The fresh pressed juice is gravity fed to their distillery via a series of hoses that stretch up to 2 km to reach their facility. The fresh cane juice is filtered and spontaneously fermented with native, ambient yeasts for 6-10 days in stainless steel and pine tanks. 

This is a 12 cask blend, 87% of which was made on their Krassel Column Still and the remaining 13% was distilled on a copper pot that is much like a mezcal still. It has no added sugar or color. For those of you who were fortunate enough to taste their Vida Nativa series of single cask releases, this has been referred to as a "Baby Pico Canoa" due to it's wild fruit flavors and complex spice notes.

Notes From Alambique Serrano:
Aged for a minimum of three years in ex bourbon barrels and new French Oak casks, the second edition of Alambique Serrano 3 Años is an eleven cask blend of pot and Krassel column still rum. It has been gently brought to a bottling proof of 46.4% abv with distilled water sourced from the Río Blanco of Santa Maria Tlalixtac. Like all Alambique Serrano rums, 3 Años was distilled from naturally-fermented cane juice harvested from the steep hillsides of the region. It has been bottled with no added sugar nor coloring.

TASTING NOTES

Nose: aloe vera, watermelon agua fresca, madonna lily, stewed plantains, raspberry marzipan, cinnamon candy, orange oil.
Palate: a burst of tropical fruits along with lime zest, watermelon, and cucumbers up front transitioning to red hots, nutmeg, and toasted almonds.
