Agua del Sol is a brand started by the Monterrosa family who are behind Mezcales Cuish. Like with that label, they are presenting mezcales from producers of agave spirits all over Mexico.

"Agua del Sol is a line of agave spirits that is structured as a co-op and represents producers from across Oaxaca. We make traditional agave spirits accessible to local
communities by keeping a part of individual batches for domestic consumption. Bottling as "Agave Spirits" helps keep costs down and allows our producer partners maintain traditional production methods."

This is a 'Destilado de Agave'or uncertified Mezcal from San Guillermo Miahuatlan, Oaxaca. Maestro Raùl Garcia comes from a long line of Mezcaleros and he makes spirits at the palenque that his father built. Mexicano Verde is an agave Rhodacantha and is made in the traditional method. The mature agaves are pit roasted with sabino wood and shredded with a wood chipper and an ox-drawn tahona. He ferments the mosto in open top wooden tinas with ambient yeasts. He double distills with the second distillation on a refrescadera, so it's sort of 2.5 times distilled. It has a lovely fruity character with a bit of sandalwood and black pepper on the finish.
