Highland Park Distillery is on the Island of Orkney in the North Sea at the extreme north of Scotland. The distillery has existed in one form or another since 1798. Their 12 year old Single Malt is aged in First and refill Sherry casks and lightly peated with local heathered peat moss. Honey, heather, fruitcake, and a faint smokiness. Delightful stuff.
