Alambique Serrano Vida Nativa Single Cask #2: Venado Temazate

VIda Nativa is a limited edition series of 4 single cask rums and 1 two cask blended rum made by the Krassel family in Santa Maria Tlalixtac which lies in the Cañada region of Oaxaca. The series celebrates and the expressions are named after flora and fauna from the Cañada’s distinctive ecosystem. They are made from estate grown Java-varietal cane juice that is naturally fermented and distilled on their "Krassel Still", a custom column still designed and built by their grandfather in the 1930's. The blend also contains a barrel of rum that was distilled on a small copper alembic still, similar to those used to produce mezcal. We were fortunate enough to taste them in Oaxaca with Jason Cox of Alambique Serrano and 5 Sentidos prior to their release and our minds were blown.
PRODUCTION NOTES:
Cane Origin: Java varietal Santa Maria Tlalixtac, Oaxaca 2,500-3,800 feet above sea level
Fermentation: In pine tanks with ambient yeasts
Distillation: By Rommel Krassel in a copper alembic pot still

Bottling: Cask strength at 62.5% ABV with no water, sugar, or coloring added. 250 bottles total.
Tasting Notes: Aromas of port grape, plum, hoja santa, snickerdoole & eucalyptus. On the palate, notes of savory apple pie and a white pepper finish.
ABOUT THE VENADO TEMAZATE
The Venado Temazate is a deer species that can be found in the cloud forests of the Cañada region. They are relatively small for deer, weighing between 35 and 65 lbs. Despite their tiny size, they are prolific seed propagators, and their small antlers are a necessary adaptation to their vegetation-dense, understory habitat.
