Certified additive free Tequila from a single brand NOM in the lowland valley's of Jalisco. They source agaves from the both the lowlands and the highlands of Jalisco and utilize a number of different processes for producing their spirits. The agaves are cooked in a mix of brick ovens and high pressure autoclaves. They are crushed with both a roller mill and a stone tahona. The mashed agaves are fermented with local spring water and champagne yeast in both stainless steel tanks, and open top wooden pipones (large barrels), some with the agave fibers and some without. They are double distilled in copper pots and the spirit is chill filtered prior to bottling.
Their Reposado is aged in a varity of barrel types including ex-Bourbon, French oak, and Cognac casks. Dark in color for a Repo, it has prominent aromas of oak, cinnamon and caramel. On the palate, oaky notes, roasted agave and black pepper dominate. A delightful, wood-forward Reposado.
