About Siete Leguas:
Founded by Ignacio Gonzalez Vargas in 1952 in the town of Atotonilco in the highlands of Jalisco, Mexico and still family owned to this day. Named after the beloved horse of the Mexican revolutionary Pancho Villa. From 1988 to 2002 they produced and bottled Patron Tequila for the owners of that brand until they built their own facility in the same town. They operate 3 distilleries within a few miles of each other. All of their agaves are from Los Altos/Highlands and are a minimum of 7 years of age prior to harvesting. They are roasted in stone and brick ovens and are crushed by mule drawn tahonas in 2 of their facilities and by a mechanical mill in the third. The agave must is fermented with fibers in large wooden tinas (tanks) from naturally occuring yeast. It is then double distilled in copper pots and proofed with spring water.
