Siembra Valles Tequila Reposado

40% ABV

Siembra Valles is a collaboration between Agave Educator and restaurateur David Suro, and Chava Rosales, master distiller at Cascahuin. "Valles" refers to the lowland valleys of Jalisco where Distillery Cascahuin is located. The agaves were roasted in brick ovens for 72 hours and crushed in a roller mill. The native yeast fermentation was done in brick and fiberglass vats with the bagasso (agave fibers) for 72 hours prior to double distillation in a stainless steel pot still with copper condensing coils. The spirit was aged in 200 liter, medium toast American Oak barrels. This is an agave forward Reposado where the barrel notes complement the underlying flavor of the spirit, rather than masking or overwhelming them. 

Cascahuin is perhaps our favorite distillery in Mexico and this bottling is consistently one of our favorite things that they make. Exquisite and hard to find, it's a true treat for agave lovers.
