Don Fulano Tequila Blanco
40% ABV
This is the flagship brand and blanco of the Tequileña Distillery from the Fonseca family. Although they are perhaps best known for their expertise with aging Tequila in the cellar, we would argue that their blancos are worthy of equal attention and praise. Their fully mature highland agaves are cooked in a low pressure autoclave and mashed with a roller mill. The mash is fermented with a proprietary yeast in open top stainless steel vats, some with the agave fibers and some without. The mash is double distilled in a copper pot and some of the spirit is distilled on a column still as well. The spirit is proofed down, aerated and rested in stainless steel. It is bottled without any additives.
Cooked agave forward with black pepper spice, some olive brine, citrus and earthy notes. An excellent Blanco sipper at a price point that is fine for mixing with.
About Tequileña Distillery:
NOM 1146, the Tequileña Distillery is located in the town of Tequila in Jalisco, Mexico. It's owned by the Fonseca family who have been farming agaves in the Highlands of Jalisco for generations. So how does a family of agave farmers from the Highlands end up with a distillery in Tequila town, located in the lowland valley of Jalisco? Several years back at a time when the price paid for agaves was at an all time low, the family found themselves with a large number of agaves ready to harvest and no way to make money selling them. So they astutely decided to purchase an old Bacardi-owned distillery in Tequila town to turn their crops into spirit which they could sit on until the prices of Tequila and agave went back up.
They are masters of maturation, both of agaves in the fields and of Tequila in barrels. Rather than harvesting entire plots or hillsides of agaves all at once, they instead only harvest individual agaves at the point of full maturation, ensuring maximum sugar content and flavor of the resulting mash and spirit. In the cellar, they are able to maintain the flavor of agave in very long aged Añejos and extra Añejos through different techniques. Their flagship brand is Don Fulano, with their longer aged spirits bottled under the Fuenteseca label. They also produce a number of brands for Tequila importer Jake Lustig including Cimmarron, Pura Sangre, and Lapis.
