Koch El Mezcal Ancestral Maguey Tobala

Mezcal Ancestral from San Juan Bautista Jayacatlàn in the Valles Centrales region of Oaxaca. "Ancestral" is a Mezcal designation that means that no machines were used in the mashing of the cooked agaves and that they were distilled in "Barro de Olla" clay pot stills. Maestro Israel Palestino Cruz harvests 9-12 year old Tobala agaves and pit roasts them in a conical oven. The cooked agaves are crushed with a donkey-drawn stone tahona and fermented with river water and ambient yeasts in clay pots. It is double distilled in clay pots and the alcohol is adjusted with "puntas y colas" or the heads and tails of the distillation.

A smoky, earthy, and mineral driven Tobala with some lovely agave fruit notes on the finish.
