Single Cask Nation is a highly respected independent bottler of whisky and rum that was founded in 2011. This is a 10 year old cask from the Diamond Distillery (aka Demerara Distillers Limited or DDL) in Guyana that was tropically aged for the full time and then bottled in Scotland without chill filtration or added color. The “MPM” on the label stands for "Main Port Mourant" and means this delightful rum from Diamond was distilled using their double wooden pot still which is the only one of its kind in use today. Constructed in 1732 on the Port Mourant Estate, this still was later moved to the Uitvlugt Estate and then to Diamond Estate in 2000. We're not sure what's more remarkable about the previous sentence, "wooden pot still" or "Constructed in 1732"!

DDL is the only operating distillery in Guyana though there used to be scores. Thankfully they have acquired the unique stills from many of the shuttered distilleries, including this one, so they are able to produce a nearly infinite number of styles and flavors depending on the still used. This is a stunning mark with loads of brown sugar, dried fruit and leather on the nose. On the palate it gives the impression of richness and sweetness on the front palate but finishes dry and a touch savory. More leather and a bit of earthy pepperiness on a lengthy and extremely pleasurable finish.
