Novo Fogo Silver Cachaca

Cachaca is a fresh cane juice based spirit and the national liquor of Brazil. It's actually the third most consumed spirit in the world after Vodka and Baijiu. Novo Fogo is a carbon negative distillery in the Atlantic forest region of Brazil. They use 100% certified organic Brazilian sugar cane and do extensive planting of native trees to reforest the area around their facilities. 

Their fresh pressed cane juice is fermented for 18 hours with wild/ambient yeasts prior to double distillation in copper alembic stills. The spirit is rested for 1 year in stainless steel tanks and not chill filtered prior to bottling. It is flavorful and clean on the palate. One of our favorite Cachacas for making Caipirinhas!
