El Dorado High Ester Blend 2nd Edition PM/DHE

El Dorado is the flagship Rum brand from Demerara Distillers Limited in Guyana. Guyana historically had numerous sugar cane estates and distilleries along the Demerara River but DDL is the lone remaining Distillery in the country. As distilleries closed, DDL would acquire the stills and equipment from the shuttered facilities, giving them the ability to produce the styles of Rums that otherwise would have been lost to time. They currently have 18 different active stills which gives them the ability to produce a wide range of styles and flavors in their Rum. 

This is a High Ester blend of column and pot still rums distilled from molasses in DDL’s John Dore double retort copper pot still (DHE) and wooden pot still from Port Mourant (PM). Esters are chemical compounds that are the byproduct of distillation and add aroma and flavor to spirits. The term is perhaps best known in reference to the funky Jamaican style rums of Hampden Estate and Worthy Park Distillery among others. The high ester levels of 1,500 g/hL AA (grams per hectoliter of absolute alcohol) are achieved through a months long fermentation. However it does not have the "hogo" funk of Jamaica but rather a concentration of rich fruit and confection. Tropically aged for 10 years in ex-Bourbon casks and bottled at cask strength.

Cocoa powder, cherry, toasted almond, saltwater taffy, cheesecake, and a hint of smoke of the nose precedes a palate of rich toffee, stewed red fruit, milk chocolate, and coffee with loads of signature Port Mourant leather and tobacco

Crafted in response to increased demand for new and experimental marques from Diamond Distillery’s fourteen operating stills, this release is a blend of two marques: the Diamond High Ester (DHE) marque and the historic Port Mourant (PM) marque. While the legendary Port Mourant still hardly needs an introduction—though it’s still worth emphasizing this is the oldest operating wooden pot still of its kind in the world—the lesser-known DHE marque is distilled in Diamond Distillery’s John Dore double retort copper pot still from a wash fermented over several months, resulting in final ester levels over 1,500 g/hL AA (grams per hectoliter of absolute alcohol)!
