Rayo Seco Sacatoro comes from the mountains of northern Guerrero and is made by 3rd generation Maestro Vinatero Israel Petronilo. Sacatoro (Agave Angustifolia Rebscens) is a rare wild harvested agave that is micro-endemic to the region. Maestro Petronilo pit roasts the agaves in an earthen oven and hand mashes them in a canoa (wooden dugout or "canoe") with an axe and wooden mallet. It is fermented with spring water and ambient yeasts and double distilled in copper alembics. 

Super fragrant and bright, it is balanced with earthy notes of minerals, cedar, mango skin, and fresh leaves. It has a sweet, low smoke profile.
