PM Spirits Destilado de Agave Espadin

PM Spirits is an importer and bottler of fine spirits from around the globe. Founder Nicholas Palazzi worked with Jason Cox of 5 Sentidos to bottle this batch of uncertified Mezcal. It is labeled a "Destilado de Agave" or Agave Distillate because it did not go through the certification process with the Mexican government but is a Mezcal in every other way.

Made by Maestro Mezcalero Rene Parada Barriga in the village of Zimatlan de Alvarez, Oaxaca from Agave Espadin. The agaves were roasted in a conical earthen oven and naturally fermented with well water in pine vats. It was double distilled to proof in a copper alembic still and yielded a batch of 563 Liters. 

It almost drinks like a Puntas due to its high alcohol and slight (but pleasant) volatility. Tropical fruit punch aromas with a mild smokiness and ripe agave funk on the palate.
