Lechuguilla Parejo Wild Cenizo

Lechuguilla is the name given to agave spirits made in the Mexican state of Chihuahua. It is essentially mezcal in terms of how it is produced, but the state is not included in the denomination of origin for Mezcal. Chihuahua is Sotol country but agaves are abundant there as well and many Sotoleros also produce agave spirits. 

Made by a 4th generation Vinatero in the town of Madera, in a forested mountainous part of the state. These are wild Cenizo (Agave Durangensis - the most common agave in the state of Durango) that are pit roasted for 3 days, put through a mechanical shredder, fermented for 7 days, and double distilled in a stainless steel alembic.
It is smoky with a with some notes of pine and tropical fruit on the nose. On the palate it’s bright and a little salty with some fruit, earth, and mineral notes.
