Lamata Ensamble Tradicional Tamaulipas

Lamata is a brand founded by Luis Loya to highlight agave spirits from the often overlooked producers in the northern states of Mexico. This bottling is from the state of Tamaulipas utilizes 3 native agaves, Univittata, Asperrima, and a variety of Agave Americana. Tamaulipas is included in the Denomination of Origin for both Mezcal and Tequila but we rarely see spirits from there due to the dangerous conditions on the ground that make producing spirits difficult. 

Produced by Maestro Jose Castellanos in the town of Las Virgenes. The agaves are roasted in an earthen pit and pressed with an antique sugar cane press called a Trapiche. It is fermented without the fibers and double distilled in a stainless steel "moonshine still" that was likely acquired in Texas after the end of prohibition. It is funky with complex notes of lemon rind, spice, and minerals. Rare and alluring.
