Made by Maestro Mezcalero Miguel Martinez in the village of San Dionisio Ocotepec, Oaxaca. Ensamble blend of 80% Espadin and 20% Tobasiche, an agave from the Karwinskii family of agaves that has a pronounced flinty, mineral sharpness. The agaves are pit roasted with mesquite and oak and ground with a stone tahona. The cooked agaves are fermented with spring water in wooden open top barrels and then double distilled in copper pot stills.
It has loads of agave sweetness on the front palate with a mineral, herbaceous bite on the finish. A bit more complexity and depth than the average Espadin at a fantastic price.
