Genepy is an alpine plant that grows wild, mainly in the Savoy region of the French alps. It is used in many herbal liqueurs, including Chartreuse, and is also blended with other alpine herbs and botanicals and made into its own namesake liqueur. It is gently sweet and bright with alpine herbal notes of mint, sage and chamomile. Dolin forages the plants in the summer, infuses and distills it, with grape spirits made from local grapes, in a copper alembic as they have since 1821. It's wonderful on the rocks, mixed with tonic or stirred into hot chocolate. It's also a good substitute for the elusive Yellow Chartreuse.
