Siembra Valles Anniversario Joven Tequila

Siembra Valles is a collaboration between Agave Educator and restaurateur David Suro, and Chava Rosales, master distiller at Cascahuin. "Valles" refers to the lowland valleys of Jalisco where Distillery Cascahuin is located. This special edition is a blend of 3 different batches of Tequila: a 42% ABV spirit that was rested for 2 months in Bourbon barrels, a 55% ABV blanco, and a 40% ABV blanco. All three batches were brick oven roasted for 72 hours, crushed in with a roller mill, fermented in cement tanks, and double distilled in copper alembic stills. 

Producer Tasting Notes:

Nose: Cooked agave leads with earthy and mineral character, accompanied by fresh herbs, citrus, pepper, and subtle sweetness.

Palate: Agave-forward and structured with roasted agave, minerals, citrus, herbal notes, pepper, and gentle barrel-derived richness.

Finish: Clean and persistent with lingering cooked agave, pepper, minerals, and subtle oak influence.
