Fumus Pumila Wood Smoked Apple Spirit

Unaged apple Brandy that was inspired by Mezcal. The fresh pressed must of apples from eastern Maryland are fermented in wooden tanks with barrel smoked apple pomace and double distilled to proof in copper alembics. The introduction of the smoky pomace and using only the heads and tails of the distillation to proof the final spirit, no water added, are reminiscent of the methods used in Mezcal production. On the nose it smells purely of fresh apples and wood smoke.
