Ambix Spirits is a small brandy distillery and apple farm in Sebastopol, CA. Founded by David Klein, a PhD physicist who worked in biotech and medical devices. He and his partner Zoe tend to over 2000 apple, pear and quince trees and make apple Brandies that are Calvados inspired but approached through the lens of their California location.

This is an unaged Pear Brandy made from their estate grown Bartlett pears. They are slowly fermented and double distilled on their Charentais alembic still and rested for up to 9 months prior to bottling. It smells of fresh Bartlett pear and melon. A stunning Eau de Vie!
