BLEND #3: TEPEJILOTE
The Tepejilote (Chamaedorea tepejilote) is a large palm that grows in the understories of tropical forests in southern Mexico and parts of Central America. The name tepejilote translates to “mountain corn” in Nahuatl, and understandably so: the unripe inflorescence both looks like and tastes similar to baby corn when boiled. In Santa Maria Tlalixtac, we find tepejilotes growing near the cane mill sites at approximately 3,000 feet above sea level.

TASTING NOTES
Nose: Eggnog, oat bran, cinnamon roll, caramelized butter on slightly burnt toast
Palate: An oily, silky texture with noats of nutmeg transitions to soy sauce, anisete & red hots
Bottled at a cask strength of 65.9% ABV with no water, sugar, or coloring added. 529 bottles total.
