Hemingway Daiquiri

by Dylan O'Brien

Cuba is the ancestral home of the Daiquiri and very likely where it was invented. The Hotel Nacional was the house Daiquiri of the namesake hotel in Havana where it was created by American bartenders who left the US during Prohibition. It features a base of Gold Rum that is accented with Apricot liqueur, Pineapple Gum Syrup, and Aromatic Bitters.

Sadly, Cuban Rum is not available in the US due to the embargo, so we swap in one of our favorite Gold Rums from Barbados which is made in a similar way to the Cuban stuff. This is an elegant, complex, gorgeously balanced take on a Daiquiri and one of our favorites at the bar.
