Puntiagudo Pulquero - Nazario Salas

Puntiagudo is a Mexican-owned independent bottler of artisanal Mezcal from multiple regions of Mexico. This batch of Agave Pulquero was made by Maestro Nazario Salas in the village of San Miguel Atlapulco in the state of Puebla. Pulquero is the agave that is traditionally used to produce Pulque, a fermented beverage made from the sap or agave honey that this and some other agaves secrete. But to be clear, this Mezcal is produced from the "Piña" or heart of the plant as any other mezcal is, and not from the sap of the plant. There is some disagreement or lack of understanding of the species of agave that Pulquero belongs to. In Oaxaca, it used to be referred to as an Agave Salmiana, and now as either an Agave Americana or Agave Atrovirens. This Mezcal hails from the state of Puebla and they refer to it as an Agave Mapisaga.
Whatever they are called, these agaves take 12 years to fully mature. The agaves are pit roasted with eucalyptus wood and crushed with a mechanical mill. The mash was fermented in 1000 liter oak tanks with well water and ambient yeasts for a full 7 days. It was double distilled in a 400 liter copper alembic still with the majority of the batch being used for local consumption and town festivities and only a small portion of it bottled for export.
This is exceptional Mezcal. Lactic and mineral driven with sweet agave fruit, lime rind, green pepper and some salinity.
