Pasas de Nuez
When the days get shorter and the weather cools off, we swap our fizzy, citrusy summer cocktails for boozy and stirred ones like this delightful concoction. "Pasas de Nuez" means "Walnuts and Raisins" which are the dominant flavors here. Cognac, a walnut liqueur called Nocino, bitters, and an off-dry Sherry combine for a cocktail with the flavors of a seasonal dessert that remains surprisingly balanced and dry. The Lustau East India Solera is one of our favorite Sherries to mix with because of its raisiny, earthy complexity and soft sweetness. Nux Alpina is a walnut liqueur that is nutty, spiced, textural, and a subtle cocktail modifier that compliments aged spirits of all kinds but especially Brandy. Stir this up as an after dinner sipper at your next holiday meal.

Pasas de Nuez
1.25 oz Pierre Ferrand Cognac
1 oz Nux Alpina Nocino
.75 oz__ Lustau East India Solera Sherry
2 Dashes Angostura Bitters
DIRECTIONS
Stir all ingredients in a mixing glass over fresh ice until properly chilled and diluted. Strain into a frozen coupe glass. Express the oils of a wide piece of orange peel over the top of the glass.
