The Classic Daiquiri
This is our ideal version of a classic White Rum Daiquiri. Probitas is a blend of rums from 2 of our favorite distilleries, Hampden Estate in Jamaica and Foursquare from Barbados. A bit of hogo funk from Hampden, some complexity and sweetness from Foursquare. Mixed with fresh squeezed Lime Juice and Liber & Co.'s Demerara Gum Syrup, it's our desert island Daiquiri.
Daiquiri
2oz Probitas Rum
3/4oz Fresh Lime
3/4oz Demerara Gum Syrup
Shake vigorously with ice and strain over fresh ice in a rocks glass. Garnish it with a lime wheel. Rinse and repeat.
