This Rum Sidecar leads with Oro y Fierro Kumquat Chili Liqueur from the Brucato Amaro Distillery, just across the bridge from us in San Francisco's Mission District. It's a tart and piquant citrus liqueur akin to a Curacao that burns hot on entry, but quickly settles into a pleasant and warming afterburn. We pair it with the amazing Doctor Bird Pineapple Rum, a Navy Strength, high-ester Jamaican Rum infused with grilled pineapple; fresh lemon juice; and a touch of sugar for balance.

2oz. Doctor Bird Navy Strength Pineapple Rum
1/2 oz. Oro y Fiero Kumquat Chili Liqueur
1 oz. Lemon Juice 🍋
1/4 oz. Simple Syrup
Rub the rim of a frozen coupe glass with the cut side of a lemon and dip half of the rim in confectioners or fine white sugar.
Add all ingredients to a cocktail shaker full of ice. Shake aggressively until well chilled and properly diluted. Strain into the coupe glass.
