The agaves are roasted in Felipe's custom brick ovens and crushed with his one-of-a-kind tahona, known as \"Felipenstein\". The agaves are fermented with the 3 water types and ambient yeasts in open top stainless steel tanks. The mash is double distilled in copper alembics.
