Produced at the fantastic NOM 1414, in the most traditional manner, and the one which we personally prefer. The fully mature highland agaves are brick oven roasted and crushed with a Tahona (TA-OH-NA) or large stone wheel. The agaves are fermented with ambient yeasts in \"pipones\" which are large, open-top wooden vats, with the agave fibers. The resulting mash is double distilled in copper pots to a high proof of 48% ABV. Easily one of our favorite new Tequila releases of the last few years. A complex flavor profile of cooked agave, citrus, minerals, and some saline.
