The brand donates heavily to a number of non-profits working to offer life changing medical services, educational programs, and economic development.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eThis is a 50\/50 blend of the unaged and aged Clairin made by \u003cmeta charset=\"utf-8\"\u003eDr. Rev. Gueillant Dorcinvil at his distillery in north-central Haiti. It seeks to honor the long tradition of infusing clairin with fruits, most commonly Mangoes which grow widely across the island. Unfortunately, Haitian mangoes are not allowed to be exported currently, so instead the infusion happens in Florida where the Clairin is bottled. \u003cmeta charset=\"utf-8\"\u003e\u003c\/span\u003eA blend of mango varieties, locally sourced and dried in Florida, is macerated in high-proof Florida sugarcane distillate for 36 hours then blended with lime zest and cinnamon. The infusion is then combined with the aged and unaged clairin and the final blend is lightly filtered before bottling.\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003e \u003cmeta charset=\"utf-8\"\u003e\u003c\/span\u003eAromas of fresh mango and sugarcane mingle with vanilla custard and orange zest before evolving into dried mango and lime leaf on the palate with a long, textural finish of mango juice.\u003c\/p\u003e\n\u003cp\u003e\u003cem\u003e\"Saint Benevolence Rum Clairin is Haiti’s premium ancestral sugarcane spirit, handcrafted from a field blend of Cristalline, Madame Meuze, Farine France and 24\/14; indigenous cane clones organically grown in the fertile alluvial soils and tropical climate of Saint Michel de l’Attalaye.\u003c\/em\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cem\u003eOur sugarcane is organically grown and farmed in the fields immediately surrounding the Dorcinvil Distillery, a third-generation family operation entrusted with the quality farming and production of Saint Benevolence Rum Clairin. Our farmers employ natural agricultural practices free from herbicides, pesticides and other chemicals.\u003c\/em\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cem\u003eThe cane is hand-harvested, pressed and fermented with wild yeasts for five to seven days, producing a lively vin de canne: a freshly fermented cane juice ripe with the expressive grassy notes of the local Saint Michel terroir.\u003c\/em\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cem\u003eIn homage to Saint Michel, the town of our spirit’s provenance, a separate batch of the freshly-pressed sugarcane juice is reduced to a syrup and fermented in the local style known as the Methode Saint Michel.\u003c\/em\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cem\u003eOur distillation process has changed little from the traditional French techniques employed throughout Haiti dating back to the 18th century. We separately small-batch distill our high-quality sugarcane juice and syrup in a single run through our handmade Creole copper pot still.
