Rezpiral Series 7 Bilîa Alejandrina + Nicolas Hernàndez

Bilìa is a rare agave from the species Maguey Seemanniana that sort of looks like a cross between a Tobala and a Cupreata. Alejandrina & Nicolas Hernandez have a palenque in the Rio Seco region of Zoquitlan, Oaxaca. 7-8 year old Bilìa are roasted in an oak and cactus fired earthen oven for 6 days. The agaves are milled with machete and a mechanical mill prior to natural fermentation in cypress vats for 7 days. The mash is double distilled in copper alembic pots.
