Sugar cane syrup made from natural cane juice is fermented with ambient yeasts and approximately 30% of dunder from the previous batches during the distillation process. This is a combination of the French colonial method of Rhum production combined with the dunder-style technique of the English in Jamaica. \u003c\/p\u003e\n\u003cp\u003eIt is sharp and vegetal with aromas of both fresh sugar cane funk and a bit of dunder-style Jamaican hogo funk. On the palate it is bright and green with cane sweetness and a lengthy finish.
